- 1/2 cup Almond Flour
- 1/2 cup Coconut Flour
- 1 teaspoon Baking Powder
- 1/8 teaspoon Salt
- 2 tablespoons + 2 teaspoons Granulated Erythritol Sweetner
- 1/4 cup Unsalted Butter, melted
- 2 large Eggs
- 2 tablespoons + 2 teaspoons Water
Preheat oven to 350°F and line a 6-cup muffin tin with paper cupcake liners.
In a medium bowl beat together eggs, melted butter, sweetner, and water.
Sift almond flour, coconut flour, baking powder, and salt together and stir into batter.
Divide batter between prepared muffin cups and bake for 15 minutes or until tops are set and a tester inserted in the center comes out clean.
Let cool for 5 minutes and enjoy with lots of butter!
If a sifter is unavailable then lightly whisk the almond flour, coconut flour, and baking powder together. Whisking or sifting dry ingredients such as salt and leavening agents incorporates and distributes them evenly throughout the flour.
